Chocolate Doughnuts

Ingredients
  • 1¼ cups all purpose flour
  • ½ cup packed brown sugar
  • ½ cup cocoa powder
  • ¼ cup white sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 1 stick butter, melted
  • ½ cup milk
  • 1 cup miniature semisweet chocolate pieces
Instructions
  1. Preheat oven to 375 degrees F
  2. Coat doughnut pan with nonstick spray
  3. In a large bowl stir flour, brown sugar, cocoa, ¼ cup sugar, baking soda, baking powder and salt together.
  4. Make a well in the center of the flour, set aside
  5. In a medium bowl combine egg, milk and melted butter.
  6. Add butter mixture all at once to flour mixture, stir until smooth.
  7. Stir in chocolate mini pieces.
  8. Spoon batter into a large resealable bag.
  9. Snip off one corner of the bag to make about a ¼" hole
  10. Pipe batter into doughnut pan, filling rings about half full
  11. Bake for about 8-10 minutes or until tops spring back when lightly touched.
  12. Cool in pan 1 minute then invert pan over wire rack get doughnuts out.
  13. Clean and respray rings with nonstick spray

You’re going to need a doughnut pan for this one. I’ve used a cocoa/cinnamon or cocoa/cayenne pepper blend instead of the usual cocoa in this recipe with great success.

Pumpkin Chocolate Chip Cookies

Ingredients
  • 1 cup canned pumpkin
  • 1 cup white sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp milk
  • 1 tbs vanilla
  • 2 cups semisweet chocolate chips
  • ½ cup chopped walnuts (optional)
Instructions
  1. Preheat oven to 350 degrees F
  2. Combine pumpkin, sugar, vegetable oil and egg.
  3. In a separate bowl, stir together flour, baking powder, cinnamon and salt.
  4. Dissolve the baking soda in the milk and stir in
  5. Add flour mixture to the pumpkin mixture and mix well
  6. Add vanilla, chocolate chips and nuts.
  7. Drop by spoonful on sheet and bake for about 10 minutes or lightly brown and firm.
  8. Cool 1 minute and transfer to wire racks.

Don’t look at me like that. These have a surprisingly good taste!

Huge Batch of Oatmeal Cookies

Ingredients
  • 4 sticks of butter, melted
  • ¾ cup shortening
  • 3¼ cup packed brown sugar
  • 1¼ cup white sugar
  • 5 eggs
  • ⅔ cup buttermilk
  • 4 tsp vanilla
  • 6 cups quick cooking oats
  • 5¾ cups all purpose flour
  • 1 tbs baking soda
  • 2½ tsp salt
  • 1 pkg (10-11 oz) chocolate chips
  • 1 cup chopped pecans (optional)
Instructions
  1. Preheat oven to 375 degrees F
  2. Cream butter, shortening and sugars in a very large bowl until fluffy and light.
  3. Add eggs, one at a time, beating well after each one
  4. Beat in buttermilk and vanilla
  5. Combine the oats, flour, baking soda and salt, and gradually add to the creamed mixture and mix well.
  6. (If you're dividing the dough, do it NOW)
  7. Stir in pecans and chips (if using them)
  8. Drop by tablespoonfulls 2" apart on cookie sheet.
  9. Bake 10-15 minutes or until golden brown
  10. Cool 1 minute on sheet and transfer to wire rack

Huge is right; you can easily divide this recipe into thirds and make 3 different kinds of oatmeal cookies. I’ve divided it and added dark chocolate chips to one third, white chips to another third, and dried cranberries to the last third. This recipe can make over 150 cookies!

Chocolate Coffee Cookies

Ingredients
  • 1 roll (16.5 oz) Pillsbury refrigerated chocolate chip cookies
  • ½ cup chopped pecans
  • ½ cup all purpose flour
  • ¼ cup cocoa/cayenne pepper blend
  • 2 tablespoons instant coffee crystals
  • 1 tsp cinnamon
  • GLAZE:
  • ½ cup powdered sugar
  • 1-2 tbs milk
  • 1 tbs unsweetened cocoa
Instructions
  1. Let cookie dough stand at room temperature 10 minutes to soften.
  2. Preheat oven 350 degrees F
  3. In large bowl, break up cookie dough and add pecans.
  4. In small bowl mix flour, ¼ cup cocoa/cayenne pepper blend, coffee crystals, and cinnamon.
  5. Stir flour mixture into cookie dough mixture until well blended. You may have to knead it to get it mixed up.
  6. Shape dough into 1" balls
  7. Place balls 2" apart on cookie sheet and gently flatten with hand
  8. Bake 9-12 minutes or until tops are cracked
  9. Cool 1 minute on sheet and transfer to wire racks.
  10. In small bowl, mix powdered sugar, milk and 1 tablespoon cocoa until smooth and well blended.
  11. Drizzle over cookies and cool 15 more minutes.

I found this recipe in a magazine and altered the ingredients to my taste.

White Chocolate Chip Cookies

  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1½ cups quick cooking oats
  • 2 cups white chocolate chips
  • 1 cup chopped pecans (optional)
Instructions
  1. Preheat oven to 350 degrees F
  2. In a medium bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Stir in the egg and vanilla
  4. Sift the flour, baking powder, salt and baking soda together and stir into the mixture.
  5. Stir in the oats and white chocolate chips and (if using them) the pecans.
  6. Drop by tablespoons onto cookie sheets
  7. Bake 10-12 minutes or until set.
  8. Cool 1 minute and transfer to wire racks.

 

Sacher Torte Cookies

Ingredients
  • 2 sticks butter, melted
  • 1 pkg (3.4 oz) instant chocolate pudding mix
  • 1 egg
  • 2 cups all purpose flour
  • ½ cup raspberry, strawberry or apricot preserves
  • GLAZE
  • ⅓ cup semisweet chocolate chips
  • 1 tbs butter
Instructions
  1. Preheat oven to 325 degrees F
  2. In a large bowl, cream the butter and pudding mix until light and fluffy.
  3. Beat in egg
  4. Gradually add sugar and mix well.
  5. Shape dough into 1" or larger balls;roll in sugar
  6. Place 2" apart on cookie sheet
  7. Make an indentation in each ball with a wooden spoon handle, about ½" deep
  8. Bake for 15-18 minutes or until set.
  9. Cool on sheet for 1 minute, then transfer to wire rack.
  10. Fill indentation with preserves
  11. For glaze, melt chips and butter together in microwave, stirring frequently until smooth. Cool slightly. Drizzle over cookies.

You can also substitute lemon or vanilla pudding for the chocolate in the recipe if you want a different flavor.

Classic Chocolate Crinkle Cookies

Ingredients
  • 4 oz unsweetened chocolate
  • ½ cup shortening
  • 3 eggs
  • 2 cups white sugar
  • 2 tsp baking powder
  • 2 tsp vanilla
  • ¼ tsp salt
  • 2 cups all purpose flour
  • ⅔ cup powdered sugar
Instructions
  1. Melt unsweetened chocolate and shortening together in microwave for 1 minute. Stir until fully melted. Set aside.
  2. Combine eggs, sugar, baking powder, vanilla and salt in a large bowl.
  3. Add chocolate mixture and stir together.
  4. Gradually add flour, stirring well after each addition.
  5. Cover and chill for 2 or until dough is easy to handle.
  6. Preheat oven to 350 degrees F
  7. Place ⅔ cup powdered sugar in bowl or bag.
  8. Shape chilled dough into 1" balls and roll in powdered sugar.
  9. Place 2" apart on cookie sheet and bake for 10-15 minutes.
  10. Cool for 1 minute on sheet and transfer to wire racks.

You can also add about 1/2 cup of chocolate chips to this recipe for that extra chocolate kick.

Black Forest Cocoa Crinkle Cookies

Ingredients
  • ¼ cup hot water
  • 2 tsp instant coffee crystals
  • 2 eggs
  • 1½ cups white sugar
  • ⅔ cup unsweetened cocoa
  • 1 stick butter, melted
  • 1½ tsp baking powder
  • 1½ tsp vanilla
  • ½ tsp salt
  • 1½ cups all purpose flour
  • 1 cup miniature semisweet chocolate chips
  • ⅔ cup dried tart cherries, finely chopped
  • ⅔ cup powdered sugar
Instructions
  1. In a small bowl combine the hot water and instant coffee crystals, stir until dissolved. Set aside.
  2. In a large bowl combine the coffee mixture, eggs, sugar, cocoa, butter, baking powder, vanilla and salt. Mix together until fully blended.
  3. Stir the flour into the mixture thoroughly.
  4. Add the chocolate chips and cherries and mix together.
  5. Cover and chill for at least 2 hours, or up to 24 hours.
  6. Preheat oven to 350 degrees F
  7. Place powdered sugar in a small bowl or bag.
  8. Shape chilled dough into 1" balls; roll balls in powdered sugar until coated.
  9. Place balls 1" apart on cookie sheet and bake 12-15 minutes. Cookies will appear dry on top and may crack.
  10. Cool on sheet 1 minute and transfer to wire rack.

If you have access to blends of cocoa, try using one of them instead of the cocoa in this recipe. I have used a cocoa/cinnamon blend in these as well as a cocoa/cayenne pepper blend, both providing an unexpectedly multiflavored cookie.

White Chocolate & Cherry Cookies

Ingredients
  • 2 cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 tsps baking powder
  • ½ tsp salt
  • 2 sticks butter, melted
  • 1½ cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 6 oz white baking chocolate, or 1 cup white chocolate chips
  • 1 cup chopped pecans
  • ½ cup dried cherries
Instructions
  1. Preheat oven to 350 degrees F
  2. In a medium bowl combine flour, cocoa, salt and baking powder. Set aside.
  3. In a large bowl melt butter and beat in sugar until combined.
  4. Beat in eggs and vanilla until combined
  5. Add flour mixture gradually and stir each addition until mixed together
  6. Add white chocolate, cherries and pecans and stir together
  7. Drop dough using a teaspoon onto sheet 2" apart
  8. Bake 10 minutes or until edges are firm (do not overbake)
  9. Remove from oven and cool on sheet 1 minute before transferring to wire rack

Rather descriptive recipe name.

  • 2 3.4 oz packages vanilla instant pudding
  • 4 eggs
  • 2 tsps vanilla
  • 4 cups semisweet chocolate chips
  • (OPTIONAL) 2 cups chopped walnuts or pecans
Instructions
  1. Preheat oven to 350 degrees F
  2. Sift together the flour and baking soda, set aside
  3. In a large bowl, cream together the melted butter, brown sugar and white sugar.
  4. Stir in the eggs and vanilla
  5. (If you are going to divide the batter, add the flour mixture but not the pudding NOW)
  6. Beat in the pudding mixes until well blended
  7. Blend in the flour mixture, a little at a time (if you didn't already add it and divided the dough)
  8. Stir in the chocolate chips and nuts (if you're using them).
  9. Drop cookies by rounded spoonful about 2" apart on cookie sheet.
  10. Bake for 10-12 minutes until edges are golden brown.
