White Chip Orange Cookies

White Chip Orange Cookies

Ingredients
  • 2¼ cups flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup (two sticks) butter
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 1 egg
  • 2-3 tsp grated orange peel (or 1 tsp orange extract)
  • 2 cups white chocolate chips
Instructions
  1. Preheat oven to 350 degrees F
  2. Combine flour, baking soda and salt in small bowl
  3. Beat butter, sugar and brown sugar in large bowl until creamy
  4. Beat in egg and orange peel (or extract)
  5. Gradually beat in flour mixture
  6. Stir in white chocolate chips
  7. Drop by rounded tablespoon onto cookie sheet
  8. Bake 10-12 minutes or until edges are light golden brown
  9. Cool on rack

Use dark chocolate chips and 1/2 tbs cocoa instead of the white chips for a darker flavor

Triple Chocolate Cookies

Ingredients
  • 1¾ cup flour
  • ½ cup cocoa
  • 1 tsp baking soda
  • 2 cups semisweet chocolate chips
  • ⅓ cup butter (3/4 stick)
  • 1¼ cup sweetened condensed milk
  • 1 egg
  • 1 tsp vanilla
  • ½ cup chopped nuts
Instructions
  1. Preheat oven to 350 degrees F
  2. Combine flour, cocoa and baking soda in mixing bowl.
  3. Melt 1 cup chips and butter in microwave, stirring until smooth
  4. Stir in condensed milk, egg and vanilla extract; mix well
  5. Stir in flour mixture
  6. Stir in nuts and remaining 1 cup of chips
  7. Drop dough by tablespoonfuls onto cookie sheet
  8. Bake 8-10 minutes or until edges are set
  9. Cool on wire racks

Substitute white chocolate chips for the unmelted chips to get quadruple chocolate taste!

Trilobite Cookies

Ingredients
  • 1 cup (2 sticks) butter
  • ⅔ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2½ cups flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 8 oz semisweet chocolate
  • strawberry preserves or some other fruit filling
Instructions
  1. Preheat oven to 350 degrees F
  2. Blend butter and sugar together
  3. Mix in egg and vanilla
  4. Add flour, salt and baking powder
  5. Put in cookie press and press out cookies
  6. Bake 12 minutes or until golden brown
  7. Add filling between two cookies the same size
  8. Melt chocolate in small bowl
  9. Dip cookies half in chocolate and refrigerate 10-20 mins

If you use an oval cookie press they do look a little like trilobites…

Cream Cheese Cookies

Ingredients
  • 1 cup (2 sticks) butter, softened
  • 3 oz cream cheese, softened
  • 1 cup white sugar
  • 1 egg yolk
  • ½ tsp vanilla
  • 2½ cups flour
Instructions
  1. Preheat oven to 325 degrees
  2. In a large bowl, cream sugar, cream cheese and butter together until light and fluffy
  3. Beat in egg yolk and vanilla
  4. Stir in flour until well blended
  5. Drop dough by spoonfuls or use a cookie press to place onto cookie sheet
  6. If desired, make an indentation in the center of cookie with your thumb and fill with preserves or chocolate
  7. Bake for 15 minutes; cookies should be almost pale

This recipe works well in a cookie press, or you can fill the center with preserves or chocolate chips for variety.

Minichip Snowballs

Ingredients
  • 1½ cup (3 sticks) butter, softened
  • ¾ cup powdered sugar
  • 1 tbs vanilla
  • ½ tsp salt
  • 3 cups flour
  • 2 cups mini chocolate chips
  • ½ cup finely chopped nuts
Instructions
  1. Preheat oven to 375 degrees F
  2. Beat butter, sugar, vanilla and salt in large bowl until creamy
  3. Beat in flour gradually; stir in morsels and nuts
  4. Shape level tablespoon of dough into ball
  5. Place on cookie sheet and bake 10-12 minutes
  6. Sift powdered sugar over hot cookies on cookie sheet
  7. Cool completely

Try hiding a dark chocolate chip or peanut butter chip in the middle of these for a surprise. I’ve also used mint chocolate chips instead of mini chips for a different flavor.

Hunka Chocolate Mint Cookies

Ingredients
  • 4 cups semisweet chocolate chips
  • 4 oz unsweetened chocolate
  • ¼ cup (1/2 stick) butter, melted
  • ¾ cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 pkg (3.6 oz) instant chocolate pudding
  • 1 tbs creme de menthe
  • 5 eggs
  • 1⅓ cup sugar
  • 2 tsp vanilla
  • 2-3 cup chopped walnut pieces
  • melted white chocolate
  • melted semisweet chocolate
Instructions
  1. Preheat oven to 350 degrees F
  2. Melt 6 oz semisweet chocolate with the unsweetened chocolate and butter, stir together
  3. Stir together the flour, baking powder and salt in separate bowl
  4. Add pudding, eggs, creme de menthe, sugar and vanilla to chocolate mixture and stir together
  5. Add flour mixture and stir until combined
  6. Stir in remaining chocolate pieces and nuts
  7. Drop onto cookie sheet using tablespoon, 2" apart, flatten slightly
  8. Bake 12-15 minutes or until edges are firm and surface is dull and cracked
  9. Remove and cool on wire racks
  10. Drizzle with white and semisweet chocolate

Try using other flavors of pudding for different cookie tastes, or leave out the creme de menthe.

Chocolate Brownie Cookies

Ingredients
  • 6 oz semisweet chocolate
  • 4 oz unsweetened chocolate
  • 6 tbs butter
  • 1¼ cup sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 cups chopped pecans
Instructions
  1. Preheat oven to 325 degrees F
  2. Melt semisweet chocolate, unsweetened chocolate and butter in microwave
  3. Stir until chocolate is completely melted and mixed
  4. Add sugar, mix well
  5. Stir in eggs and vanilla
  6. Add flour, baking powder and salt, mix until well blended
  7. Stir in pecans
  8. Drop rounded spoonfuls of dough 2" apart on baking sheet
  9. Bake 12-15 minutes or until cookies are set
  10. Cool on wire rack

Very rich chocolate flavor with these cookies; if you are leaving out the nuts increase flour to 1 1/4 cups to keep dough from spreading out.

Mint Surprise Cookies

Ingredients
  • 1 cup sugar
  • ½ cup packed brown sugar
  • ¾ cup butter, softened
  • 2 tbs water
  • 1 tsp vanilla
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 60 thin rectangular creme de menthe chocolate candies, unwrapped
  • 60 walnut halves (optional)
Instructions
  1. Beat sugar, brown sugar, butter, water, vanilla and eggs together in bowl
  2. Beat in flour, baking soda and salt until well blended
  3. Cover with plastic wrap and refrigerate about 2 hours
  4. Preheat oven to 375 degrees F
  5. Press about one tablespoon dough around each chocolate candy to cover completely
  6. Place balls of dough 2" apart on cookie sheet
  7. Top each with walnut half (if using)
  8. Bake 9-12 minutes or until light golden brown
  9. Cool on rack

Nothing better than watching people take a bite out of one of these cookies and notice the chocolate mint flavor hiding inside…

Lemon Cookies

Lemon Cookies

Ingredients
  • 3 cups flour
  • ½ tsp baking soda
  • dash of salt
  • 1½ cups sugar
  • ¾ cup (1½ stick) butter, softened
  • 1 egg
  • ¼ cup lemon juice
  • 2 tbs finely grated lemon peel (or 1 tsp lemon extract)
Instructions
  1. Preheat oven to 375 degrees F
  2. Stir together the flour, baking soda and salt.
  3. In a separate bowl, beat together the sugar and butter until light and fluffy
  4. Beat in the egg, lemon juice and zest (or extract)
  5. Gradually beat in the flour mixture
  6. Form dough into two rolls 2" across and 7" long
  7. Wrap rolls in waxed paper and refrigerate an hour
  8. Unwrap dough and cut into slices ¼" thick using a thin sharp knife
  9. Place on cookie sheet and bake about 12 minutes until lightly browned around the edges
  10. Cool cookies on wire rack

Adding lemon extract instead of zest makes the cookies even more lemony tasting.

Shortbread Cookies II

Ingredients
  • 2 cups (4 sticks) butter, softened
  • 1 cup sugar
  • 2 tsp vanilla
  • 4 cups flour
Instructions
  1. Preheat oven to 350 degrees F
  2. Cream butter and sugar together until fluffy
  3. Stir in vanilla and flour and mix well
  4. Put dough in cookie press and form cookies onto baking sheets
  5. Bake for 10-15 minutes
  6. Drizzle cooled cookies with chocolate, if desired

A very light tasting cookie, good for use in a cookie press. Drizzle chocolate over cooled cookies for extra flavor
