Oatmeal Raisin Chocolate Chunk Cookies

Oatmeal Raisin Chocolate Chunk Cookies

Ingredients
  • 1¾ cup flour
  • 1 cup quick cooking oats
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (1½ sticks) butter, melted
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 12 oz (2 cups) chocolate chunks
  • 1 cup raisins
Instructions
  1. Preheat oven to 375 degrees F
  2. Mix flour, oats, baking soda and salt in medium bowl; set aside
  3. Beat butter and sugars in large bowl until light and fluffy
  4. Add egg and vanilla; mix well
  5. Gradually add flour mixture, beating until well blended
  6. Stir in chocolate chunks and raisins
  7. Drop tablespoonfuls of dough 2" apart on cookie sheet
  8. Bake 13-15 minutes or until golden brown
  9. Cool on wire racks

Ingredients
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1¼ cup flour
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick cooking oats
  • 1 cup chopped walnuts (optional)
  • 1 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 325 degrees F
  2. In a large bowl, cream the butter, brown sugar and white sugar together
  3. Beat in eggs one at a time, then stir in vanilla
  4. Combine the flour, baking soda and salt
  5. Stir flour mixture into butter mixture and stir
  6. Mix in the quick oats, nuts and chocolate chips
  7. Drop by heaping spoonfuls onto baking sheet
  8. Bake 12 minutes or until golden brown
  9. Cool on wire rack

 

Black Gold Cookies

Ingredients
  • 6 Tbs flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 10 oz semisweet chocolate, chopped, divided
  • 2 oz unsweetened chocolate, chopped
  • 6 tsp butter, melted
  • 2 eggs
  • ½ cup sugar
  • 2 tsp vanilla
Instructions
  1. Preheat oven to 325 degrees F
  2. Combine flour, baking powder and salt; set aside
  3. Melt butter, unsweetened chocolate and 6 oz semisweet chocolate in microwave in medium bowl
  4. Add eggs, sugar and vanilla to melted chocolate, stirring after each ingredient
  5. Add the flour mixture and stir until combined
  6. Stir in the remaining 4 oz semisweet chocolate
  7. Drop batter onto cookie sheet using tablespoon, about 2" apart
  8. Bake 9-10 minutes or until set
  9. Cool on wire rack

 

Soft Chocolate Chip Cookies

Ingredients
  • 1¼cups granulated sugar
  • 1¼cups packed brown sugar
  • 1½cups butter or margarine, softened
  • 2 teaspoons vanilla
  • 3 eggs
  • 4¼cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 3 cups semisweet chocolate chips
Instructions
  1. Heat oven to 375°F. In large bowl with electric mixer, beat granulated sugar, brown sugar and butter until light and fluffy.
  2. Beat in vanilla and eggs until well blended.
  3. Beat in flour, baking soda and salt.
  4. Stir in chocolate chips.
  5. On ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  6. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

I’m always looking for a soft chocolate chip cookie recipe; the ones I’ve got so far turn out crunchy, which is fine, but I like a chewy cookie too sometimes.

Peanut Butter Brownie Trifle

Ingredients
  • 1 fudge brownie mix (13-inch x 9-inch pan size)
  • 1 package (10 ounces) peanut butter chips
  • 2 packages (13 ounces each) miniature peanut butter cups
  • 4 cups cold 2% milk
  • 2 packages (5.1 ounces each) instant vanilla pudding mix
  • 1 cup creamy peanut butter
  • 4 teaspoons vanilla extract
  • 3 cartons (8 ounces each) frozen whipped topping, thawed
Instructions
  1. Prepare brownie batter according to package directions;
  2. stir in peanut butter chips.
  3. Bake in a greased 13-in. x 9-in. baking pan at 350° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack; cut into ¾-in. pieces.
  4. Cut peanut butter cups in half; set aside ⅓ cup for garnish.
  5. In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Add peanut butter and vanilla; mix well.
  6. Fold in 1-1/2 cartons whipped topping.
  7. Place a third of the brownies in a 5-qt. glass bowl; top with a third of the remaining peanut butter cups.
  8. Spoon a third of the pudding mixture over the top.
  9. Repeat layers twice.
  10. Cover with remaining whipped topping; garnish with reserved peanut butter cups. Refrigerate until chilled.

 

Chocolate Lasagna

Ingredients
  • 1 package regular Oreo cookies – about 36 cookies
  • 6 Tablespoon butter, melted
  • 1- 8 ounce package cream cheese, softened
  • ¼ cup granulated sugar
  • 2 Tablespoons cold milk
  • 1- 12 ounce tub Cool Whip, divided
  • 2 – 3.9 ounce packages Chocolate Instant Pudding.
  • 3¼ cups cold milk
  • 16 oz dark chocolate
  • 1 and ½ cups mini chocolate chips
Instructions
  1. Begin by crushing 36 Oreo cookies.
  2. Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs.
  3. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan.
  4. Place the pan in the refrigerator while you work on the additional layers.
  5. Melt the dark chocolate in a pan or microwave; spread over waxed paper creating a layer about ⅛" thick. Refrigerate until solid.
  6. Mix the cream cheese with a mixer until light and fluffy.
  7. Add in 2 Tablespoons of milk, and sugar, and mix well.
  8. Stir in 1 and ¼ cups Cool Whip. Spread this mixture over the crust.
  9. In a bowl, combine chocolate instant pudding with 3 and ¼ cups cold milk.
  10. Use a spatula to spread the mixture over the previous cream cheese layer.
  11. Break the thin solid dark chocolate into large pieces and place on top of the chocolate pudding layer.
  12. Repeat layers of cream cheese and pudding and solid dark chocolate as desired.
  13. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.
  14. Spread the remaining Cool Whip over the top.
  15. Sprinkle mini chocolate chips evenly over the top.
  16. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.

 

Mini-Morsel Blond Brownies

Ingredients
  • 1 cup (2 sticks) butter, melted
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2¼ cups flour
  • 2 cups mini-chocolate chip morsels, divided
Instructions
  1. Preheat oven to 350 degrees F
  2. Beat melted butter and sugar together until creamy
  3. Stir in egg and vanilla
  4. Gradually beat in flour
  5. Stir in one cup mini-chocolate chip morsels
  6. Press into bottom of 13"x9" pan
  7. Bake for 35 minutes or until top begins to brown
  8. Immediately sprinkle remaining morsels on top of dough
  9. Let stand five minutes or until morsels are shiny; spread over top
  10. Cool in pan

This recipe isn’t really a brownie, but it’s close.

Chewy Choco-Nut Brownies

Ingredients
  • ¾ cup (1½ stick) butter, melted
  • 1½ cups packed brown sugar
  • 2 eggs
  • 1½ cups flour
  • 1 tsp baking powder
  • 6 oz white chocolate, divided
  • 1 cup salted peanuts, chopped
  • 1 oz semisweet chocolate
Instructions
  1. Preheat oven to 350 degrees F
  2. Beat melted butter and brown sugar together until fluffy
  3. Beat in eggs, flour, and baking powder
  4. Chop 5 oz of white chocolate and stir into batter along with peanuts.
  5. Spread into 13x9 pan
  6. Bake 25 minutes or until knife in center comes out almost clean. Cool in pan.
  7. Melt 1 oz of white chocolate in microwave and drizzle over brownies.
  8. Melt semi sweet chocolate in microwave and drizzle over brownies

 

Triple Espresso Brownies

Ingredients
  • BROWNIE
  • 1 pkg Family Sized Brownie mix
  • 2 tsp instant coffee granules
  • 1 tsp vanilla
  • FILLING
  • ¼ cup (1/2 stick) butter, melted
  • ½ cup packed brown sugar
  • 1 egg
  • 2 tsp instant coffee granules
  • 1 tsp vanilla
  • 1 cup chopped walnuts, pecans or peanuts
  • 10 oz semisweet chocolate, chopped
  • GLAZE
  • ½ cup semisweet chocolate chips
  • 1 tbs butter
  • ⅛ tsp instant coffee granules
  • 2 tsp milk or whipping cream
Instructions
  1. Preheat oven to 350 degrees F
  2. In large bowl, prepare brownie mix as directed on box
  3. Spread in 13x9 pan
  4. Bake for about 30 minutes
  5. In small bowl, combine butter and brown sugar until fluffy
  6. Add egg, coffee granules and vanilla; beat until blended
  7. In medium bowl, mix nuts and chopped chocolate
  8. Stir in brown sugar mixture until well blended
  9. Spoon and carefully spread filling over partially baked brownies
  10. Bake 17-20 minutes longer or until light brown
  11. Melt chocolate chips and butter in small bowl, stir until smooth
  12. Stir in coffee granules and milk or whipping cream until a good drizzling consistency
  13. Drizzle over warm brownies
  14. Cool in pan

Caution; don’t eat these right before going to bed! Good for when you have to stay up late… 🙂

Cherry Truffle Brownies

Ingredients
  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • ⅓ cup semisweet chocolate chips
  • ¼ (1/2 stick) butter, melted
  • ¼ cup cocoa
  • 3 tbs light corn syrup
  • 1 tbs milk
  • 2 cups powdered sugar
  • 1 jar (10 oz) maraschino cherries, drained and chopped
  • Topping & Garnish
  • 1 cup white vanilla baking chips (6 oz)
  • 2 tbs shortening
  • Chocolate curls or shavings
Instructions
  1. Heat oven to 350 degrees F
  2. Cut cookie dough in half crosswise, then cut each piece in half lengthwise
  3. Press dough slices into 13x9 pan to form crust
  4. Bake 15 minutes or until golden brown. Cool completely (45 minutes)
  5. In medium bowl, melt butter and chocolate chips in microwave and stir until combined
  6. Stir in cocoa, corn syrup and mil
  7. Stir in powdered sugar until smooth
  8. Spoon and spread evenly over cooled crust; press lightly
  9. Top with cherries; press into filling
  10. In small bowl, microwave white chips and shortening and stir until combined
  11. Spoon and spread over filling.
  12. Refrigerate until set, about 20 minutes
  13. Garnish with chocolate curls

You could also use blueberries or strawberries in this recipe.
