Chocolate Chip Oatmeal Pudding Cookies

Chocolate Chip Oatmeal Pudding Cookies

Ingredients
  • 2¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 sticks butter, melted
  • ¾ cup brown sugar
  • ¾ cup white sugar
  • 1 4.2 oz package instant chocolate pudding
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup oats
  • 2 cups dark chocolate chips
Instructions
  1. Preheat oven to 375 degrees F
  2. Whisk flour, baking soda and salt together in bowl. Set aside
  3. Cream butter and sugars together.
  4. Mix in pudding, vanilla and eggs. Beat until well mixed
  5. Add flour mixture to batter and stir until nearly completely mixed
  6. Add oats and stir until completely mixed together
  7. Stir in chocolate chips
  8. Drop batter by tablespoons about 2.5" apart.
  9. Bake 9-15 minutes or until edges are light brown
  10. Transfer to cooling rack

 

Red Velvet Cheesecake Cookies

Ingredients
  • One box red velvet cake mix
  • 2 tbs flour
  • 2 eggs
  • ½ cup canola oil
  • 1 tsp vanilla extract
  • FILLING
  • 4 oz cream cheese at room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
Instructions
  1. COOKIES
  2. Combine cake mix and flour in large bowl; whisk until clumps disappear
  3. Add eggs, oil and vanilla extract, mix until smooth
  4. Wrap dough in plastic wrap and refrigerate for 2 hours
  5. FILLING
  6. Combine cream cheese, powdered sugar and vanilla and mix until smooth
  7. Form balls of filling and place on a plate
  8. Put plate in freezer and freeze for 2 hours
  9. Preheat oven to 350 degrees F
  10. Place about two tablespoons of cookie batter in your hand and flatten.
  11. Place a ball of filling onto the flattened batter and fold batter up around the filling
  12. Place on baking sheet about 2" apart
  13. Bake for 11-15 minutes or until the tops begin to crack
  14. Cool on sheet for 5 minutes before removing to wire rack

 

Marry Me Cookies

Ingredients
  • 1 cup butter
  • 1¼ cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup oats
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips
Instructions
  1. Melt butter and add sugars; stir until fully mixed
  2. Cool mixture in refrigerator for 10 minutes
  3. Remove from refrigerator and stir in egg, egg yolk and vanilla
  4. Add flour, oats, baking soda, salt and cinnamon and mix together
  5. Stir in white and dark chocolate chips
  6. Using a scoop or large spoon, roll into balls and place on cookie sheet
  7. Chill for 30 minutes
  8. Preheat oven to 325 degrees F. Remove cookies from refrigerator and bake for 12-15 minutes.
  9. Remove from oven and place on wire rack to cool

 

Farmhouse Cookies

Ingredients
  • ½ cup butter
  • 7 tbs brown sugar
  • 5 tbs crunchy peanut butter
  • 1 egg
  • ½ cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1½ cup oats
  • ½ cup dried cranberries
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees F
  2. Cream butter and sugar until light and fluffy
  3. Beat in peanut butter and then the egg
  4. Sift flour, baking powder, cinnamon and salt over peanut butter mixture and stir
  5. Stir in oats, cranberries and chocolate chips
  6. Drop rounded tablespoons of mixture on baking sheet about 1" apart
  7. Press gently with the back of a spoon to flatten (I used my fingers)
  8. Bake for 12-15 minutes or until lightly colored
  9. Cool on wire rack
