Dark Chocolate Dark Brown Sugar Cookies

Dark Chocolate Dark Brown Sugar Cookies

  • 1 stick butter, softened
  • ¾ cup dark brown sugar
  • 1 egg
  • 1 tbs vanilla
  • 1½ cups flour
  • ½ cup unsweetened cocoa
  • 1 tsp cornstarch
  • ¾ tsp baking soda
  1. Combine the softened butter, sugar, egg, vanilla and beat until creamy
  2. Add the remaining ingredients and mix together
  3. Refrigerate batter for at least 2 hours
  4. Roll into 1" balls and place on cooking sheet.
  5. Bake at 350 degrees F for about 10 minutes-do not overbake
  6. Cool for five minutes before placing on wire rack


White Chocolate Mint Fudge

White Chocolate Mint Fudge

  • 21 oz white chocolate
  • 2 tbs butter
  • 2 tsp mint extract
  • green food coloring
  • ¾ cup mini chocolate chips, divided
  • 1 can sweetened condensed milk
  1. Melt the butter and white chocolate together in the microwave. Run the microwave only 30 seconds at a time, stirring after each run, to make sure the white chocolate does not burn.
  2. Stir in the mint extract and green food coloring
  3. Stir in ½ cup mini chocolate chips
  4. Add the sweetened condensed milk to the white chocolate. NOTE. Add this last; it will cause the chocolate to seize up.
  5. Press the mixture into an 8"x8" pan lined with wax paper and sprinkle the remaining ¼ cup chips on top. Press chips into top.
  6. Refrigerate at least 2 hours before cutting into squares


Spicy Red Wine Chocolate Cookies

Spicy Red Wine Chocolate Cookies

Serves: 5 dozen
The combination of red wine and cayenne pepper is tasty and interesting.
  • 4 oz unsweetened chocolate
  • ¾ cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 tsp vanilla
  • ¼ cup red wine
  • ¼ tsp cayenne pepper
  • 2½ cups flour
  1. Preheat oven to 350 degrees F
  2. Melt chocolate and butter together in the microwave, stirring until combined
  3. Add sugar and mix together
  4. Blend in eggs, wine and vanilla
  5. Add flour and cayenne pepper, stir until mixed
  6. Refrigerate 1 hour or until dough is easy to handle
  7. Shape in 1" balls and place on cookie sheet
  8. Bake 9-10 minutes
  9. Let stand one minute before transferring to wire rack
