Red Velvet Cheesecake Cookies

Ingredients
  • One box red velvet cake mix
  • 2 tbs flour
  • 2 eggs
  • ½ cup canola oil
  • 1 tsp vanilla extract
  • FILLING
  • 4 oz cream cheese at room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
Instructions
  1. COOKIES
  2. Combine cake mix and flour in large bowl; whisk until clumps disappear
  3. Add eggs, oil and vanilla extract, mix until smooth
  4. Wrap dough in plastic wrap and refrigerate for 2 hours
  5. FILLING
  6. Combine cream cheese, powdered sugar and vanilla and mix until smooth
  7. Form balls of filling and place on a plate
  8. Put plate in freezer and freeze for 2 hours
  9. Preheat oven to 350 degrees F
  10. Place about two tablespoons of cookie batter in your hand and flatten.
  11. Place a ball of filling onto the flattened batter and fold batter up around the filling
  12. Place on baking sheet about 2" apart
  13. Bake for 11-15 minutes or until the tops begin to crack
  14. Cool on sheet for 5 minutes before removing to wire rack

Ingredients
  • 1 cup butter
  • 1¼ cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup oats
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips
Instructions
  1. Melt butter and add sugars; stir until fully mixed
  2. Cool mixture in refrigerator for 10 minutes
  3. Remove from refrigerator and stir in egg, egg yolk and vanilla
  4. Add flour, oats, baking soda, salt and cinnamon and mix together
  5. Stir in white and dark chocolate chips
  6. Using a scoop or large spoon, roll into balls and place on cookie sheet
  7. Chill for 30 minutes
  8. Preheat oven to 325 degrees F. Remove cookies from refrigerator and bake for 12-15 minutes.
  9. Remove from oven and place on wire rack to cool

 

Farmhouse Cookies

Ingredients
  • ½ cup butter
  • 7 tbs brown sugar
  • 5 tbs crunchy peanut butter
  • 1 egg
  • ½ cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1½ cup oats
  • ½ cup dried cranberries
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees F
  2. Cream butter and sugar until light and fluffy
  3. Beat in peanut butter and then the egg
  4. Sift flour, baking powder, cinnamon and salt over peanut butter mixture and stir
  5. Stir in oats, cranberries and chocolate chips
  6. Drop rounded tablespoons of mixture on baking sheet about 1" apart
  7. Press gently with the back of a spoon to flatten (I used my fingers)
  8. Bake for 12-15 minutes or until lightly colored
  9. Cool on wire rack

 

Pumpkin Oatmeal Cookies

Ingredients
  • 1 stick (8 oz) butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 1 cup oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup chocolate chips
  • 2½ cup flour
Instructions
  1. Preheat oven to 350 degrees F
  2. Cream butter, white and brown sugars together
  3. Beat in egg, vanilla and pumpkin
  4. Add the oats, baking powder, cinnamon, salt, chips and flour to the mixture and stir until blended.
  5. Drop cookies by teaspoon onto cookie sheet.
  6. Bake 12-15 minutes or until slightly browned at the edges
  7. Cool 1 minute on sheet before removing on rack

Ingredients
  • 3 Tablespoons water
  • 2 Tablespoons instant coffee crystals
  • 1 pkg Brownie Mix
  • 1 egg
  • 3 Tablespoons vegetable oil
  • ¼ tsp cinnamon
  • 1½ cups chocolate chips
  • ½ cup chopped nuts (optional)
Instructions
  1. Preheat oven to 350 degrees F
  2. In a small bowl combine water and coffee crystals, stir until dissolved, set aside
  3. In a large bowl combine brownie mix, egg, oil, cinnamon and espresso mixture.
  4. Stir in chocolate chips and nuts if desired
  5. Drop dough by teaspoon fulls onto prepared cookie sheet
  6. Bake about 6-10 minutes or until edges are set
  7. Cool on sheet for 2 minutes before removing

  • 1 Box Ghiradelli Double Chocolate Brownie mix
  • 1 cup flour
  • 3 eggs
  • ⅓ cup vegetable oil
  • ¼ cup powdered sugar
Instructions
  1. Preheat oven to 350 degrees F
  2. Mix brownie mix, flour, eggs and oil together in medium bowl
  3. Stir until blended
  4. Roll dough into balls about 1" across
  5. Roll dough balls in powdered sugar in separate bowl
  6. Place 2" apart on cookie sheet
  7. Bake 11-15 minutes

  • 1 Box Brownie Mix
  • ½ stick butter (4 tbs)
  • 1 egg
  • 30 caramels, melted
  • pecan halves
Instructions
  1. Preheat oven to 350 degrees F
  2. In large bowl, mix brownie mix, melted butter and egg together
  3. Drop by rounded spoonfuls 1" apart on cookie sheet
  4. Press a dent into each cookie with your thumb or wooden spoon handle
  5. Fill with caramel and place a pecan half over the caramel
  6. Bake 11-15 minutes

 

Chocolate Mint Twists

Ingredients
  • 1 cup (2 sticks) butter, melted
  • ⅔ cup sugar
  • 1 egg
  • 2 tsp vanilla
  • 2 tbs cocoa or 1 oz semisweet chocolate, melted
  • 1 tsp mint extract
  • green food coloring
  • 2 oz dark chocolate, melted
Instructions
  1. In a large bowl combine butter and sugar; mix well
  2. Beat in egg and vanilla
  3. Mix in flour
  4. Divide dough in half
  5. Add cocoa to one dough half, stir until combined
  6. Add mint extract and a few drops of green food covering to the other dough half, stir until combined
  7. Divide each portion in half again, forming two chocolate portions and two mint portions
  8. Shape each portion into 9" long rope. Twist one chocolate rope and one mint rope together
  9. Gently roll twisted portions together until one roll forms
  10. Wrap each roll in waxed paper and chill for at least one hour
  11. Preheat oven to 350 degrees F
  12. Cut rolls about ¼" thick
  13. Place slices ½" apart on cookie sheet
  14. Bake for 10 minutes or until edges are firmed
  15. After cookies are cooled, drizzle with 2 oz melted dark chocolate. Let stand until chocolate sets.

Ingredients
  • 1 cup (2 sticks) butter, melted
  • ½ cup powdered sugar
  • 1 tbs water
  • 1 tsp vanilla
  • 2 cups flour
  • 1½ cups finely chopped pecans
  • 1 cup powdered sugar (for coating)
Instructions
  1. In a large bowl beat butter and add powdered sugar, mixing well
  2. Beat in the water and vanilla until combined
  3. Mix in the flour and pecans
  4. Chill for an hour until the dough is firm enough to shape
  5. Preheat oven to 325 degrees F
  6. Shape dough into 1" balls
  7. Place 1" apart on baking sheet
  8. Bake about 15 minutes or the bottoms just start to turn brown
  9. Cool on wire racks
  10. Place 1 cup powdered sugar in a plastic bag.
  11. Add cookies in batches to the bag; gently shape to cover

For chocolate covered sandies, reduce the 1 cup powdered sugar to 3/4 cup and stir in 1/4 cup cocoa. Shake cooled cookies to coat.

Ingredients
  • 1½ cups (3 sticks) butter, melted
  • ½ cup sugar
  • ½ cup packed brown sugar
  • ¼ cup cocoa
  • 1 tsp baking powder
  • 1 egg
  • 1 tsp vanilla
  • 3¼ cups flour
  • 4 oz semisweet chocolate, grated
  • ½ cup finely chopped pecans (optional)
  • Powdered Sugar (optional)
  • Dutch process cocoa (optional)
Instructions
  1. Preheat oven to 375 degrees F
  2. Beat butter, sugar, brown sugar, cocoa and baking powder together, mixing well
  3. Beat in egg and vanilla
  4. Gradually beat in flour, semisweet chocolate and pecans
  5. Force unchilled dough through a cookie press fitted with a ribbon shape plate onto the baking sheet, forming a 6" ribbon
  6. Cut each ribbon diagonally into 2" lengths, place shapes about 1" apart
  7. Bake for 8-10 minutes or edges are firm
  8. Sprinkle cookies (if desired) with powdered sugar and Dutch-process cocoa
