Ingredients
  • 2 cups flour
  • ½ cup cocoa
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 6 tbs (3/4 stick) butter, melted
  • 1 cup sugar
  • 2 large eggs
  • ¾ cup dried cranberries
  • ¾ cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees F
  2. Sift together the dry ingredients
  3. Beat butter and sugar together until very smooth
  4. Beat in the eggs
  5. Mix in dry ingredients until blended
  6. Stir in cranberries and chocolate chips
  7. Divide dough; shape each piece into a 12" long, ½" thick log
  8. Bake for 25 minutes, cool 20 minutes
  9. Slice into ½" thick cookies. Stand them on edge and bake for 15 more minutes

  • 2¼ cups flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1½ sticks butter, melted
  • 1 cup sugar
  • 2 tsp lemon extract
  • 4 large eggs
  • 1½ tsp vanilla
  • ½ cup milk
Instructions
  1. Preheat oven to 325 degrees F
  2. Whisk together the dry ingredients
  3. Beat the butter, sugar and lemon extract together
  4. Add the eggs one at a time, beating after each one
  5. Stir in the vanilla
  6. Blend in the dry ingredients and milk
  7. Divide the batter among three 5¾" loaf pans and bake 45-50 minutes
  8. Cool completely

 

No Bake Chocolate Grasshopper Pie

No Bake Chocolate Grasshopper Pie

Ingredients
  • 36 crushed oreo cookies
  • ¼ cup (1/2 stick) butter, melted
  • 3 cups cold milk
  • 2 pkg (3.4 oz) pistachio instant pudding mix
  • 4 cups Cool Whip, divided
  • 12 Oreo Mint cookies, chopped
  • 2 oz semisweet chocolate, melted
Instructions
  1. Mix cookie crumbs and melted butter together, press into bottom of 13x9" pan
  2. Pour milk and pudding into large bowl, stir until mixed
  3. Stir in 2 cups Cool Whip and the chopped cookies
  4. Spoon into crust, cover with remaining Cool Whip
  5. Melt chocolate in microwave and drizzle over top
  6. Refrigerate 2 hours or until firm

Ingredients
  • 1⅓ cup boiling water
  • 2 pkg strawberry flavor gelatin (3.4 oz)
  • 1 cup cold water
  • 2 tubs (8 oz) Cool Whip
  • 2 cups chopped strawberries
  • 2 cups crushed graham cracker crumbs
  • 2 cups sliced strawberries
Instructions
  1. Press graham cracker crumbs into bottom of 13x9" pan
  2. Stir boiling water into gelatin mix and stir until completely dissolved
  3. Add enough ice to cold water to make 2 cups.
  4. Add to gelatin, stirring until slightly thickened
  5. Remove any unmelted ice
  6. Add whipped topping; stir until well blended
  7. Stir in chopped strawberries
  8. Refrigerate 30 minutes or mixture is very thick
  9. Spoon onto crumbs
  10. Refrigerate 6 hours or overnight
  11. Top with sliced strawberries

Ingredients
  • 35 Vanilla wafers, crushed
  • ¼ cup (1/2 stick) butter, melted
  • 2 pkg (8 oz) cream cheese
  • 2 cups cold milk
  • 2 boxes (3.4 oz) vanilla instant pudding
  • 1 cup frozen limeaide concentrate
  • 2½ tsp rum extract
  • 2 cups whipping cream
  • ½ cup powdered sugar
  • 1½ tsp mint extract
Instructions
  1. Preheat oven to 450 degrees F
  2. Combine crumbs and melted butter; press into bottom of 13x9" pan. Bake 10 minutes.
  3. Beat cream cheese until creamy. Add milk, instant pudding, limeaide and rum extract.
  4. Beat 3 minutes until thick and creamy
  5. Spoon filling onto crust, spread evenly
  6. In same bowl, beat whipping cream, powdered sugar and mint extract together until stiff peaks form
  7. Spread topping over filling; refrigerate about an hour

  • ⅓ cup strawberry jam
  • 1 graham cracker pie crust
  • 4 oz cream cheese, softened
  • 1 tbs sugar
  • 1 tub (8 oz) Cool Whip, thawed, divided
  • 1½ cups cold milk
  • 2 pkg (3.4 oz) lemon instant pudding
Instructions
  1. Spread jam onto bottom of crust
  2. Mix cream cheese and sugar and mix together
  3. Stir in ½ of the Cool Whip
  4. Spread over jam
  5. Pour milk into bowl and add pudding mixes
  6. Beat 2 minutes or until blended
  7. Stir in remaining Cool Whip; spread over cream cheese layer
  8. Refrigerate 4 hours

Ingredients
  • 35 vanilla wafers, crushed (about 1 cup)
  • ¼ cup (half a stick) butter, melted
  • 2 oz semisweet chocolate, divided
  • ½ cup creamy peanut butter
  • 2 bananas, cut lengthwise into quarters
  • 2 pkg (3.4 oz) vanilla instant pudding
  • 2 cups cold milk
  • 2 cups cool whip topping, divided
  • 2 tbs salted peanuts, coarsely chopped
Instructions
  1. Preheat oven to 350 degrees F
  2. Mix wafer crumbs and melted butter together; press into bottom of 9" pie plate
  3. Bake 5-8 minutes
  4. Microwave chocolate and peanut butter 1 minute, stir until chocolate is melted and mixture is well blended
  5. Place bananas on crust; drizzle with melted chocolate
  6. Beat pudding mixes and milk in large bowl
  7. Stir in 1 cup cool whip
  8. Spread over bananas
  9. Top with remaining cool whip
  10. Refrigerate 3 hours
  11. Top with chocolate curls and chopped nuts

  • 1 pkg (2 layer size) yellow cake mix
  • 2 cups cold milk
  • 1¼ cups water
  • 2 pkg (4 serving size) lemon flavored instant pudding mix
  • ⅓ cup sugar
  • 2 tbs powdered sugar
Instructions
  1. Preheat oven to 350 degrees F
  2. Prepare cake batter as directed on package
  3. Pour into 13x9 baking dish, set aside
  4. Pour milk and water into large bowl
  5. Add dry pudding mixes and sugar
  6. Beat with wire whisk 2 minutes or until well blended
  7. Pour over batter
  8. Bake 55 minutes to 1 hour or until knife in center comes out clean
  9. Cool 20 mins
  10. Sprinkle with powdered sugar

 

Peanut Butter Brownie Trifle

Ingredients
  • 1 fudge brownie mix (13-inch x 9-inch pan size)
  • 1 package (10 ounces) peanut butter chips
  • 2 packages (13 ounces each) miniature peanut butter cups
  • 4 cups cold 2% milk
  • 2 packages (5.1 ounces each) instant vanilla pudding mix
  • 1 cup creamy peanut butter
  • 4 teaspoons vanilla extract
  • 3 cartons (8 ounces each) frozen whipped topping, thawed
Instructions
  1. Prepare brownie batter according to package directions;
  2. stir in peanut butter chips.
  3. Bake in a greased 13-in. x 9-in. baking pan at 350° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack; cut into ¾-in. pieces.
  4. Cut peanut butter cups in half; set aside ⅓ cup for garnish.
  5. In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Add peanut butter and vanilla; mix well.
  6. Fold in 1-1/2 cartons whipped topping.
  7. Place a third of the brownies in a 5-qt. glass bowl; top with a third of the remaining peanut butter cups.
  8. Spoon a third of the pudding mixture over the top.
  9. Repeat layers twice.
  10. Cover with remaining whipped topping; garnish with reserved peanut butter cups. Refrigerate until chilled.

 

Chocolate Lasagna

Ingredients
  • 1 package regular Oreo cookies – about 36 cookies
  • 6 Tablespoon butter, melted
  • 1- 8 ounce package cream cheese, softened
  • ¼ cup granulated sugar
  • 2 Tablespoons cold milk
  • 1- 12 ounce tub Cool Whip, divided
  • 2 – 3.9 ounce packages Chocolate Instant Pudding.
  • 3¼ cups cold milk
  • 16 oz dark chocolate
  • 1 and ½ cups mini chocolate chips
Instructions
  1. Begin by crushing 36 Oreo cookies.
  2. Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs.
  3. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan.
  4. Place the pan in the refrigerator while you work on the additional layers.
  5. Melt the dark chocolate in a pan or microwave; spread over waxed paper creating a layer about ⅛" thick. Refrigerate until solid.
  6. Mix the cream cheese with a mixer until light and fluffy.
  7. Add in 2 Tablespoons of milk, and sugar, and mix well.
  8. Stir in 1 and ¼ cups Cool Whip. Spread this mixture over the crust.
  9. In a bowl, combine chocolate instant pudding with 3 and ¼ cups cold milk.
  10. Use a spatula to spread the mixture over the previous cream cheese layer.
  11. Break the thin solid dark chocolate into large pieces and place on top of the chocolate pudding layer.
  12. Repeat layers of cream cheese and pudding and solid dark chocolate as desired.
  13. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.
  14. Spread the remaining Cool Whip over the top.
  15. Sprinkle mini chocolate chips evenly over the top.
  16. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.
