Chocolate Nut Truffles

Ingredients
  • 1 pkg (8 oz) cream cheese, softened
  • 1 cup (6 oz) semisweet chocolate chips, melted
  • 1 cup crushed vanilla wafers (about 30)
  • ¼ cup strawberry preserves
  • 1¼ cup chopped nuts
Instructions
  1. In a large bowl, beat cream cheese until smooth
  2. Beat in the melted chocolate, wafer crumbs and strawberry preserves.
  3. Refrigerate for at least an hour or until firm
  4. Using rubber gloves, shape mixture into 1" balls. Roll in chopped nuts and refrigerate.

 

Creme de Menthe Truffles

Creme de Menthe Truffles

Ingredients
  • ½ cup butter, melted
  • 1 cup finely chopped pecans
  • ¼ cup creme de menthe
  • 4 cups confectioners sugar
  • 2 cups (12 oz) semisweet chocolate chips
  • 2 tsp shortening
Instructions
  1. Combine the melted butter, pecans and creme de menthe in a large bowl.
  2. Beat in confectioner's sugar gradually
  3. Cover and refrigerate for one hour or until firm
  4. Wearing rubber gloves, shape mixture into 1" balls and place on waxed paper
  5. Chill for 30 minutes or until firm
  6. Melt the chocolate chips and shortening together in microwave, stir until smooth.
  7. Dip balls in chocolate mixture and return to waxed paper.
  8. Chill until set.

Ingredients
  • 3 cups semisweet chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1 tbs vanilla
  • Finely chopped nuts, flaked coconut, powdered cocoa or decorative sprinkles
Instructions
  1. In a microwave, combine chips and condensed milk. Microwave 3 minutes, stirring halfway through, stir until smooth.
  2. Stir in vanilla.
  3. Chill for 3 hours or until firm
  4. While wearing rubber gloves, shape mixture into 1" balls.
  5. Roll in desired coatings: nuts, cocoa, decorative sprinkles, etc.
  6. Chill 1 hour in refrigerator.

 

Dark Chocolate Orange Truffles

Ingredients
  • 12 oz dark chocolate chips
  • ¾ cup heavy whipping cream
  • 1 tsp orange extract
  • ⅓ cup sugar
Instructions
  1. Melt the chocolate in the microwave, stirring occasionally until smooth
  2. Gradually stir in cream until blended
  3. Stir in orange extract
  4. Cool to room temperature, stirring occasionally
  5. Refrigerate until firm enough to work with.
  6. Shape into ¾" balls, roll in sugar.

 

Bittersweet Chocolate Truffles

Bittersweet Chocolate Truffles

Ingredients
  • 10 oz bittersweet chocolate
  • 3 tbs butter
  • ½ cup heavy cream
  • 1 tbs corn syrup
  • 8 oz chocolate (for dipping)
Instructions
  1. Microwave bittersweet chocolate and butter together 30 seconds twice, stirring between intervals until smooth
  2. Heat the heavy cream and corn syrup together on the stove until simmering
  3. Pour cream mixture over chocolate and stir. Pour into glass baking dish and chill one hour.
  4. Using a melon baller, scoop up chocolate and form into balls; place on wax paper and chill another hour.
  5. Melt 8 oz semisweet chocolate and coat balls with it. Chill in refrigerator until firm.

 

Oreo Truffles

Ingredients
  • 1 8 oz pkg cream cheese, softened
  • 1 pkg Oreo cookies, pulverized
  • 8 oz dark chocolate, melted
Instructions
  1. Once the cream cheese is softened, stir the pulverized Oreo cookies into it until well mixed.
  2. Shape into balls and place on cookie sheet lined with wax paper
  3. Melt chocolate. Using forks, dip cream cheese balls into chocolate until fully covered. Place back on wax paper.
  4. Sprinkle chocolate covered truffles with topping
  5. Refrigerate at least an hour.

Three ingredients; that’s all you need to make these. If you want to add a topping, I’ve used crushed Oreo cookies, cocoa, crushed nuts, multicolored sprinkles and powdered sugar. You can also shove chocolate chips or nuts into the cookie/cream cheese ball before dipping in chocolate as another option.
