Chocolate Mint Brownies

Ingredients
  • 2 cups sugar
  • 1 cup (2 sticks) butter, softened
  • 4 eggs
  • ½ cup unsweetened chocolate, melted
  • 2½ cups flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 tsp vanilla
  • Frosting
  • 4 tbs butter, softened
  • 2 tbs evaporated milk
  • 2 cups confectioner's sugar
  • ½ tsp peppermint extract
  • Drizzle
  • 3 oz chocolate, melted
Instructions
  1. Preheat oven to 350 degrees, F
  2. Prepare a 13x9" baking pan
  3. Cream sugar and butter until fluffy
  4. Beat in eggs and melted chocolate until well blended
  5. Mix dry ingredients and add to creamed mixture
  6. Stir in vanilla
  7. Spread into pan and bake for 35 minutes or until a knife comes out clean from the middle
  8. Cool in pan
  9. Mix mint frosting ingredients until creamy and spread on cooled brownies
  10. Drizzle melted chocolate lightly over frosting
  11. Refrigerate for 1 hour
