Hunka Chocolate Mint Cookies

  • 4 cups semisweet chocolate chips
  • 4 oz unsweetened chocolate
  • ¼ cup (1/2 stick) butter, melted
  • ¾ cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 pkg (3.6 oz) instant chocolate pudding
  • 1 tbs creme de menthe
  • 5 eggs
  • 1⅓ cup sugar
  • 2 tsp vanilla
  • 2-3 cup chopped walnut pieces
  • melted white chocolate
  • melted semisweet chocolate
  1. Preheat oven to 350 degrees F
  2. Melt 6 oz semisweet chocolate with the unsweetened chocolate and butter, stir together
  3. Stir together the flour, baking powder and salt in separate bowl
  4. Add pudding, eggs, creme de menthe, sugar and vanilla to chocolate mixture and stir together
  5. Add flour mixture and stir until combined
  6. Stir in remaining chocolate pieces and nuts
  7. Drop onto cookie sheet using tablespoon, 2" apart, flatten slightly
  8. Bake 12-15 minutes or until edges are firm and surface is dull and cracked
  9. Remove and cool on wire racks
  10. Drizzle with white and semisweet chocolate

Try using other flavors of pudding for different cookie tastes, or leave out the creme de menthe.
