Lemon Cookies

Serves: 5-6 dozen
  • 3 cups flour
  • ½ tsp baking soda
  • dash of salt
  • 1½ cups sugar
  • ¾ cup (1½ stick) butter, softened
  • 1 egg
  • ¼ cup lemon juice
  • 2 tbs finely grated lemon peel (or 1 tsp lemon extract)
  1. Preheat oven to 375 degrees F
  2. Stir together the flour, baking soda and salt.
  3. In a separate bowl, beat together the sugar and butter until light and fluffy
  4. Beat in the egg, lemon juice and zest (or extract)
  5. Gradually beat in the flour mixture
  6. Form dough into two rolls 2" across and 7" long
  7. Wrap rolls in waxed paper and refrigerate an hour
  8. Unwrap dough and cut into slices ¼" thick using a thin sharp knife
  9. Place on cookie sheet and bake about 12 minutes until lightly browned around the edges
  10. Cool cookies on wire rack

Adding lemon extract instead of zest makes the cookies even more lemony tasting.
