Mint Shortbread Cookies

  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 egg
  • 2⅔ cups flour
  • ¼ tsp salt
  • 2 tsp peppermint extract
  • green food coloring as desired
  • 1 oz dark chocolate melted for drizzling
  1. In large bowl, cream butter and sugar until fluffy
  2. Beat in the egg and peppermint extract
  3. Combine flour and salt and stir into butter mixture
  4. Add several drops of green food coloring until you get the shade of green you want, mixing well.
  5. Roll into a log, wrap in plastic wrap and refrigerate for 1 hour
  6. Preheat oven to 400 degrees F
  7. Slice log into ¼" slices and put on cookie sheet
  8. Bake for 9-10 minutes or until lightly golden on edge
  9. Remove to wire rack to cool.
  10. Drizzle with melted chocolate
