Ingredients
  • 2 cups sugar
  • 1 cup (2 sticks) butter, softened
  • 4 eggs
  • ½ cup unsweetened chocolate, melted
  • 2½ cups flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 tsp vanilla
  • Frosting
  • 4 tbs butter, softened
  • 2 tbs evaporated milk
  • 2 cups confectioner's sugar
  • ½ tsp peppermint extract
  • Drizzle
  • 3 oz chocolate, melted
Instructions
  1. Preheat oven to 350 degrees, F
  2. Prepare a 13x9" baking pan
  3. Cream sugar and butter until fluffy
  4. Beat in eggs and melted chocolate until well blended
  5. Mix dry ingredients and add to creamed mixture
  6. Stir in vanilla
  7. Spread into pan and bake for 35 minutes or until a knife comes out clean from the middle
  8. Cool in pan
  9. Mix mint frosting ingredients until creamy and spread on cooled brownies
  10. Drizzle melted chocolate lightly over frosting
  11. Refrigerate for 1 hour

 

Green Mint Crinkles

Ingredients
  • 1 stick butter, melted
  • ¾ cup sugar
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1 egg
  • ¼ cup milk
  • 2 cups flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 (2¼ oz) jar green sugar crystals
  • Chocolate kisses
Instructions
  1. Preheat oven to 350 degrees F
  2. Mix melted butter, sugar, peppermint and vanilla extracts.
  3. Mix in egg and milk and stir well
  4. In a separate bowl mix flour, baking powder, salt and green sugar crystals
  5. Add flour mixture to butter mixture and stir until well mixed
  6. Shape batter into 1" balls and place on baking sheet
  7. Bake for 10-12 minutes
  8. Remove from sheet and immediately press chocolate kiss or chocolate chips into top of warm cookie
  9. Cool on wire rack

 

Mint Shortbread Cookies

Ingredients
  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 egg
  • 2⅔ cups flour
  • ¼ tsp salt
  • 2 tsp peppermint extract
  • green food coloring as desired
  • 1 oz dark chocolate melted for drizzling
Instructions
  1. In large bowl, cream butter and sugar until fluffy
  2. Beat in the egg and peppermint extract
  3. Combine flour and salt and stir into butter mixture
  4. Add several drops of green food coloring until you get the shade of green you want, mixing well.
  5. Roll into a log, wrap in plastic wrap and refrigerate for 1 hour
  6. Preheat oven to 400 degrees F
  7. Slice log into ¼" slices and put on cookie sheet
  8. Bake for 9-10 minutes or until lightly golden on edge
  9. Remove to wire rack to cool.
  10. Drizzle with melted chocolate

Ingredients
  • 1¼ cup sugar
  • 1¼ cup brown sugar
  • 3 sticks butter, softened
  • 2 tsp vanilla
  • 3 eggs
  • 4¼ cups flour
  • 2 tsp baking soda
  • ½ tsp salt
  • ½ tsp peppermint extract
  • 10 drops green food coloring
  • 1 cup creme de menthe baking chips
  • 2 cups chocolate chips
Instructions
  1. Preheat oven to 350 degrees F
  2. Stir sugars and softened butters together until well mixed
  3. Add vanilla, peppermint extract and eggs to mixture and stir together; add green food coloring and mix in.
  4. In a separate bowl combine salt, flour and baking soda
  5. Add flour mixture to batter gradually and stir
  6. Stir in creme de menthe baking chips and chocolate chips
  7. Drop dough onto cookie sheet about 2" apart and bake for 10-12 minutes
  8. Cool before removing from sheet, transfer to wire rack

 

Chocolate & Peanut Butter Cheesecake

Ingredients
  • 1 box shortbread cookies
  • 6 tbs butter, melted
  • 3- 8 oz packages of cream cheese, softened
  • 3 oz dark chocolate, melted
  • 1 cup white sugar
  • 3 eggs
  • ½ cup sour cream
  • 1½ tsp vanilla
  • 12 mini peanut butter cups, cut in half
  • 12 mini milky way pieces, cut in half
  • 2 oz bittersweet chocolate
Instructions
  1. Preheat oven to 325 degrees F
  2. Crush shortbread cookies and mix with melted butter. Press into bottom of 13x8" pan, set aside
  3. Beat softened cream cheese, sugar and melted chocolate together until well mixed
  4. Add eggs, one at a time, and stir well
  5. Beat in sour cream and vanilla until fully mixed
  6. Unwrap and cut up peanut butter cups and milky way minis and add to mixture.
  7. Add mixture to pan and spread evenly
  8. Bake 40-50 minutes until middle still jiggles slightly when shook
  9. Place pan on cooling rack for few hours. Cover and refrigerate for at least 3 hours or overnight.
  10. Melt bittersweet chocolate and drizzle over cheesecake

Ingredients
  • 1 box yellow cake mix
  • 1 stick butter, melted
  • 2 eggs
  • ½ cup full-fat sour cream
  • 1 Tbs vanilla
  • ¼ tsp ground nutmeg
  • ¾ cup powdered sugar
Instructions
  1. Preheat oven to 350 degrees F
  2. Spray a mini-muffin pan with baking spray
  3. In a large bowl, combine cake mix, melted butter, eggs, sour cream, vanilla and nutmeg together and stir until blended
  4. Using a teaspoon, fill each mini-muffin mold about ⅔ full with batter
  5. Bake for 8-10 minutes or until they start turning golden brown
  6. Remove from oven and cool a few minutes before removing from mold
  7. Place powdered sugar in a bag and toss about 4-5 cooked beignets in. Shake bag until they are well coated.
  8. Keep in airtight container

 

Dark Chocolate Cheesecake Bites

Ingredients
  • 20 oz dark chocolate
  • ½ cup heavy cream, whipped
  • 1 tsp vanilla
  • 1 tsp rum extract
  • ½ cup cream cheese, softened
  • 1 pkg instant vanilla pudding
  • Mini chocolate chips
  • About 30 mini cupcake liners
Instructions
  1. Chop up and melt the dark chocolate either on the stove or in the microwave. Stir every 30 seconds in the microwave until all the chocolate is melted.
  2. Using a teaspoon, drop melted chocolate into mini cupcake papers and smooth so it covers the bottom.
  3. Place chocolate filled papers in the freezer for about 10 minutes.
  4. FILLING
  5. Mix the softened cream cheese and whipping cream together until blended.
  6. Add the rum and vanilla extract and mix well
  7. Add the vanilla pudding and stir until thick. It will thicken up quickly.
  8. Remove the cupcake liners from the freezer and add a teaspoon of the cream cheese mixture to each liner, pressing it down on top of the chocolate.
  9. Using the remaining chocolate, pour over the cream cheese mixture to cover completely.
  10. Sprinkle mini chocolate chips on top of melted chocolate while it is still soft
  11. Put back in freezer and chill for at least 3 hours

  • 2¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 sticks butter, melted
  • ¾ cup brown sugar
  • ¾ cup white sugar
  • 1 4.2 oz package instant chocolate pudding
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup oats
  • 2 cups dark chocolate chips
Instructions
  1. Preheat oven to 375 degrees F
  2. Whisk flour, baking soda and salt together in bowl. Set aside
  3. Cream butter and sugars together.
  4. Mix in pudding, vanilla and eggs. Beat until well mixed
  5. Add flour mixture to batter and stir until nearly completely mixed
  6. Add oats and stir until completely mixed together
  7. Stir in chocolate chips
  8. Drop batter by tablespoons about 2.5" apart.
  9. Bake 9-15 minutes or until edges are light brown
  10. Transfer to cooling rack

Ingredients
  • One box red velvet cake mix
  • 2 tbs flour
  • 2 eggs
  • ½ cup canola oil
  • 1 tsp vanilla extract
  • FILLING
  • 4 oz cream cheese at room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
Instructions
  1. COOKIES
  2. Combine cake mix and flour in large bowl; whisk until clumps disappear
  3. Add eggs, oil and vanilla extract, mix until smooth
  4. Wrap dough in plastic wrap and refrigerate for 2 hours
  5. FILLING
  6. Combine cream cheese, powdered sugar and vanilla and mix until smooth
  7. Form balls of filling and place on a plate
  8. Put plate in freezer and freeze for 2 hours
  9. Preheat oven to 350 degrees F
  10. Place about two tablespoons of cookie batter in your hand and flatten.
  11. Place a ball of filling onto the flattened batter and fold batter up around the filling
  12. Place on baking sheet about 2" apart
  13. Bake for 11-15 minutes or until the tops begin to crack
  14. Cool on sheet for 5 minutes before removing to wire rack

  • ½ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup oats
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips
Instructions
  1. Melt butter and add sugars; stir until fully mixed
  2. Cool mixture in refrigerator for 10 minutes
  3. Remove from refrigerator and stir in egg, egg yolk and vanilla
  4. Add flour, oats, baking soda, salt and cinnamon and mix together
  5. Stir in white and dark chocolate chips
  6. Using a scoop or large spoon, roll into balls and place on cookie sheet
  7. Chill for 30 minutes
  8. Preheat oven to 325 degrees F. Remove cookies from refrigerator and bake for 12-15 minutes.
  9. Remove from oven and place on wire rack to cool
